Best of: Vitamix

Frequenting Costco as often as I do can be a blessing or a curse.  I definitely didn’t need to buy the holiday flannel sheets, fuzzy robe (I already have 2) or the countless purchases from their daily samples- though I’m totally grateful for discovering their Marinated Eggplant dish! But of the many Many great buys I’ve had, I’d say the ultimate purchase has been my Vitamix. I use it at least 5x a week- talk about getting my money’s worth! Mostly it’s salad dressings, smoothies, marinades and soups. Here are my fave recipes/uses for the Vitamix:

Whole Fruit Margarita– As in, you toss in whole limes, lemons and oranges, minus the peel. I skip the sugar and add Liquid Stevia.  This is one of the best Margarita recipes I’ve ever had- even better than Guapos!

Acai Bowl– My husband and I have these on Wednesdays and Saturdays (our special non-omelet days ;).  We mix ours with a frozen banana and a nut butter and then top with fage total, granola, fresh berries and honey. So GOOD!

Silver Palate’s Poppy Seed Dressing– When using an egg in a salad dressing you really want to make sure it’s blended properly. This recipe is my go-to for my Spinach Salad. It’s also amazing over pasta, coleslaw and plain broccoli.

Powdered Sugar– In a bind and don’t have powdered sugar? Just toss in granulated sugar, blend and boom!

Black Bean Soup– Soup made in minutes! Just add sauteed onions, garlic, beans, seasonings and chicken broth all together in the Vitamix and there you have it! This isn’t the only soup I make in there: Corn Chowder, Carrot and Ginger, Broccoli and White Bean, and Gazpacho are all my go-tos.

Every Smoothie You’ve Ever Wanted- Frozen fruit, veggies, nuts, granola, milk, honey- everything will get obliterated into a beautiful, silky-smooth drink.
